Shrimp Jambalaya
1 teaspoon cooking oil
1 teaspoon flour
1 lb. shrimp (peeled and deveined)
1 onion (chopped)
3 cloves garlic (chopped)
1 medium sized bell pepper (chopped)
1 tablespoon parsley (finely chopped)
1 tablespoon Paprika
1 tablespoon Worcestershire Sauce
1 small can tomato paste
1 can whole tomatoes (chopped & undrained)
4 cups rice
Heat da oil in da pot. Na put in da flowa and stir til it turn a coppa panny color. Ya jis made yosef a roux, yeah! Cot dawg, you good, you! Okay, na lowa da fiyuh and add da onyons, da bell peppa, da salry and da garlic. Stir da whole time and den put in ya shrimps. Saute' on a low fiyuh, dere, faw tan minutes. Drop in da tamata paste and da whole chopped tamatas. Simma faw anudda tan minutes, stir and add enuff wata ta cova arryting. Cook all dis faw tirty minutes. Add da rice, ya stir it, and ya cova it. Cook on a low heat, dere, faw twanny ta twanny-five minutes. Keep it covered but no stirrin', non. Na ya kin eatcha hawt out, sha.
Seafood Stuffed Potato
For each serving use:
1 medium baking potato
1 tablespoon butter
1 tablespoon sour cream
1/8 cup chives (finely chopped)
1/4 cup crabmeat
1/4 cup boiled shrimp
1 slice cheese of your choice
1/4 cup mushrooms
1/2 tablespoon onion (finely chopped)
1/4 teaspoon garlic (finely chopped)
lemon juice and Tabasco Sauce if desired
Prepair da patatas faw baking; wash and prick holes in dem. Na ya bake'm in da oven or da microwave. It don't make no matta, non. But if ya microwave dem, bake dem faw fifteen minutes on high. Let'em cool off and den cut'em in haf lentways. Scrape da patatas outa da skin and put'em in a bakin' dish. Na ya mash dem tatas and add da sour creem and da buta til melted. Easy, easy, ya fold (lil bit at a time) in da shrimps, da crabmeat, da mushrooms and da mash patatas inta skins (optional) or in a servin' dish. Top wit da cheese and da chives and place in a warm oven til da cheese dun melted. Ya kin garnish wit a few parsley flakes, bacon bits and jis a lil dash o' lemon juice and Tabasco if ya wanna. Das up ta you!
